Avocado on toast is such a classic! There are so many health benefits to this incredible breakfast/ brunch, an absolute treat. The best toast to use in our opinion is sourdough! Sourdough actually has quite a lot of health benefits due to the fermentation process, so overall you can say it is better than normal white or brown bread! We love topping our toast with either scrambled eggs (depending on the mood of course) or mozzarella and mushrooms!
INGREDIENTS:
1/2 an avocado
2 medium slices of sourdough bread
2 thick slices of mozzarella (also depends on how much mozzarella you'd like)
4 chestnut mushrooms
1tsp butter
smoked paprika to taste
1 thick spring onion or 2 thin ones
3 cherry tomatoes
salt and pepper to taste
lime juice to taste
chilli oil (optional)
METHOD:
Start by preparing your sourdough slices (you can ask tesco bakers to slice the sourdough for you, incase you didn't know that)
Then smash your avocado with a fork, you can keep it chunky or smash it completely if you would like.
add in the lime juice, salt and pepper to taste.
leave the smashed avocado aside, and let's start on the mushrooms
in a pan, add in the butter and allow to sizzle slightly
add in the mushrooms and paprika, and stir until they reduce in size
leave mushrooms aside.
toast the sourdough and then spread the avocado on top
then slice your mozzarella and put on top, along with the mushrooms
then sprinkle with the tomatoes, spring onion and chilli oil! And that's it.
