Blueberry and Rosemary Mocktails

This one is perfect for a hot summer's day! If you would like to make an alcoholic alternative gin would be a good combination, and a tip for this recipe - source some good quality rosemary it will enhance the smell of the drink completely!

INGREDIENTS (makes two drinks):
- 10 blueberries
- 4 large sprigs of rosemary with leaves separated
- 1 medium lemon squeezed
- 2 tsp of sugar mixed with 1 tbsp of water to create a syrup
- Lemonade or tonic water
- Ice to fill 2 glasses halfway
- Lemon slices to garnish
METHOD:
Place the blueberries in the microwave for 20 seconds and with a spoon smash into a pulp (the colour is great isn't it!)
In a measuring jug add the lemon juice, sugar syrup, rosemary and smashed blueberries
Pour this mixture into a cocktail shaker (or an empty waterbottle) and shake for 3 minutes
Fill 2 glasses with ice halfway and pour the drink mixture over in equal amounts
Pour lemonade or tonic water over your mixture to fill the glass and garnish with a slice of lemon.
