Hey guys! This is our blueberry waffle recipe, inspired by many other delicious recipes. You can also make this recipe vegan, feel free to comment/ leave suggestions too!
Growing up, my family didn't eat eggs, so when it came to desserts like waffles and pancakes, we could never find recipes for desserts without EGGS! The amount of times I've had to tell people that "I'm not vegan, I just can't eat eggs." Even though I eat eggs now, I still can't bring them into my parent's home, so this recipe is inspired by my crazy childhood. I do hope you enjoy it!
Serves: 3
Time: 15-20 mins
Ingredients (Veggie):
3/4 cups all-purpose flour
3tbsp of sugar (your choice what type)
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup whole milk (semi-skimmed is also fine) + 1 tsp apple cider or white vinegar
1 teaspoons vanilla extract
3 tbsp melted butter
a small handful of blueberries (your choice)
2 teaspoon blackcurrant conserve or any berry jam you have
Vegan Replacements:
Butter - Vitalite Butter
Milk - Soy milk, Oat milk, almond milk (almond milk gives a lovely flavour)
To make this recipe a bit more healthy:
You can replace the sugar with a sweetener (I use Canderel).
Replace the butter with coconut oil, and perhaps use around 2tbsp
Replace all purpose flour with brown flour, wholewheat etc.
Method:
Combine all the dry ingredients (Flour, sugar, baking powder, baking soda, salt) and mix well.
Then, whisk all your wet ingredients (Milk, vanilla extract, butter/ oil, water).
Combine the wet and the dry ingredients, make sure to not over whisk - a few lumps is just fine.
Then mix in your blueberries and jam.
preheat your waffle machine and spread a little butter on the iron.
Then proceed with your batter and spread on the iron. Cook this until golden brown and crispy.
Add your toppings of choice.
Topping ideas:
nuts: almonds, walnuts, almond flakes
whipped cream, single cream
maple syrup
strawberries, berries
or mix in blueberry jam with double cream, and watch it become a pretty berry cream.
