Cherry Crumble

The Humble Veggie

This recipe was genuinely created because of quarantine and lockdown, but I am so glad I accidentally stumbled onto this tasty masterpiece. I distinctly remember watching a movie and my parents asking me to make apple crumble, but after searching the kitchen I realised we had no fruit left. I turned to the freezer and grabbed a bag of frozen cherries, shrugged my shoulders and said "Oh well, it will do." Now, its a weekly family favourite and I wouldn't substitute it for anything else!




INGREDIENTS (Makes 5 Servings)

  • 1 cup flour

  • 1 tbsp cinnamon

  • 2 Biscuits crushed (I used digestives)

  • Half a cup of oats

  • Half a cup of desiccated coconut

  • 4 tbsp of sugar (any type works)

  • Half a cup of butter

  • 480g of pitted frozen cherries

  • Half a lemon

METHOD:

  1. Preheat the oven to 180 degrees Celsius

  2. Add the flour, cinnamon, biscuits, coconut, butter and 2 tbsp of sugar into a bowl and mix by lifting the mixture through your hands and letting it fall back into the bowl. Repeat until you have reached crumble like consistency

  3. Add your frozen cherries, lemon juice and remaining sugar into a saucepan on high heat and cover (to retain the moisture) only stirring occasionally

  4. After 5 minutes you will begin to see a liquid forming at the bottom which will create your cherry sauce. Pour the contents of the saucepan through a strainer into a bowl to collect all the liquid. Once all the sauce has been extracted cover the saucepan and continue cooking on medium heat

  5. After a few more minutes lift the lid stir through the mixture, and try for taste (if it too sour add a little more sugar)

  6. Pour this contents into a tin, cover with your crumble mixture and place in the oven for 20 minutes

  7. When serving drizzle the cherry sauce over each portion (I recommend eating with a scoop of ice cream on the side too!)
