I'll be completely honest, I love chilli paneer and this is such a good way to make it a little healthier. Poke bowls are great - traditionally made with raw fish, but if you are a veggie/vegan you can use tofu (i recommend tofooco), paneer, mozzarella, lentils - basically anything high in protein. You can use any vegetables, and not just raw vegetables (I roasted courgette slices), get creative!
INGREDIENTS:
One bowl of salad (I used carrot strips, cucumber strips, lettuce, peppers and onion)
3 tbsp sesame seed oil
2 cloves of garlic
One quarter of an onion finely diced
1 tbsp soya sauce
1tbsp hot sauce
1 tsp ketchup
1 tsp sugar
1/2 tsp apple cider vinegar
100g paneer diced into 2cm cubes
sesame seed to garnish
METHOD:
Pour the 2 tbsp oil into a saucepan on medium heat. After 2 minutes, toast the paneer for 5-8 minutes turning regularly. Normally I would cover the paneer in a batter then deep fry it, but this is a healthier and quicker alternative. Keep the toasted paneer aside in a bowl
Pour the remaining oil into the saucepan, when heated add the onions and garlic, sautee them until tender.
Add the rest of the ingredients into the saucepan (apart from the paneer and garnish), after 3 minutes of cooking add the paneer
Garnish with sesame seeds and add to the poke bowl
