Courgette Spaghetti with Caramelised Onions and Balsamic Vinegar Dressing

The Humble Veggie

Spaghetti is one of my favourite pasta dishes, there's something so satisfying about twirling the strands around your fork wondering when your meal is going to get from cutlery to mouth, but sadly it is very carby and therefore doesn't make great diet food *sighs*. To satisfy my never ending pasta cravings I've been experimenting with 'fake pasta' and this by FAR is the most delicious and easiest recipe to make.




INGREDIENTS:

- Half a courgette made into strands using a spiraliser (if you don't have one you could use a julienne peeler to make strands)

- A handful of cherry tomatoes halved

- 2 Tbsp of Olive oil

- 1/4 of an onion cut using a spiraliser (if you don't have one chop your onions in any shape, just ensure they are thin)

- Salt and pepper to taste

- 1/2 tbsp of mixed dried herbs

- 2 Tsp of sugar

- 3 tbsp of balsamic vinegar


METHOD:

  1. Once you have cut your courgette into strands using your spiraliser make sure to cover with a paper towel to remove any moisture (this is so that your courgette doesn't get soggy when cooking)

  2. Add one Tbsp of oil to a pan and keep on a medium to high heat. Once the pan is hot add your courgette and herbs, saute moving the strands around for 2 minutes (anymore and your veggies will get soggy!)

  3. Place your courgette strands in a pasta dish and pour 1/2 Tbsp of olive oil in the pan on a high heat.

  4. Add your onions and cover with 1 tsp of sugar to caramelise. Ensure you are cooking at a high heat and keep moving the onions around to prevent burning. Cook for 2 mintues max!

  5. Remove your onions from the pan and place inside your pasta dish (mix in well with the courgette)

  6. Add the remaining olive oil and on a high heat add the tomatoes, saute for two minutes and then place them into your pasta dish.

  7. For the glaze, on a medium heat add the balsamic vinegar and the rest of the sugar and heat until a syrup texture forms (should only take 1 min), drizzle this over your courgette spaghetti and finish with salt and pepper to taste.
