Quesadillas are so easy to make and another great sandwich substitute. I encourage you to get inventive with the vegetables you add and make them your own!
INGREDIENTS (Makes 3 small quesadillas)
1 large tortilla
Half a chopped spring onion
a few slices of avocado
a few slices of aubergine
paprika seasoning
a sprinkle of grated cheese
a handful of black beans
diced peppers
1 tbsp hummus
1 tbsp salsa
METHOD:
Place tortilla on a pan, on low to medium heat and add all your toppings on only one side the tortilla
Fold the tortilla over and with a spatula press down until the cheese begins melting
Flip to tortilla and press down again with spatula
Remove from the pan once the tortilla has browned and cut into 3 triangles
