Goats Cheese & Chilli Jam Toastie

Hey guys, this recipe is quite short and simple. However, everyone knows that toasties are delicious, yet so easy. This particular one is my favourite go-to toastie. During my final year of school, I would usually go to this small toastie shop, and have this delicious toastie. So one day, I decided I would try and recreate this magical toastie. Unfortunately this recipe is not vegan friendly, however if there is a vegan version of goats cheese then go ahead and try this out! Or perhaps use vegan mozzarella and some sautéed mushrooms.

time: 10 minutes


Ingredients:


note* If you live in the UK, check properly if your local supermarket stores soft goats cheese that is vegetarian. Some contain animal rennet and so should be wary that this means it is not vegetarian. Most supermarkets do store vegetarian goats cheese, but just be careful.


  • 2 large slices of fresh sourdough bread (I highly recommend making this from scratch, but store bought also works well for this recipe)

  • a tablespoon of softened butter (soft enough to spread your slices)

  • 90g of soft goats cheese

  • 1 and 1/2 tbsp of chilli jam (available in some sainsburys, M&S, Waitrose) or order online.


Method:


  1. Preheat your toastie machine, or your pan if toasting on gas.

  2. Butter both sourdough slices on 1 side generously

  3. Spread your chilli Jam on the non buttered side, making sure it is nicely covered

  4. Proceed to generously spread your goats cheese.

  5. then put these together and toast until it is golden and crispy. Make sure that the goats cheese is also well melted!
