Okay so who doesn't love pesto?! This recipe is one of my favourites. It is easy and convenient, but above all - delicious. You can put pesto in pasta, bruschetta, garlic bread - it is amazing.
INGREDIENTS:
25g toasted pine nuts
50g fresh basil leaves with stalks removed
50g hard Italian cheese, freshly grated
1/2 or 1 clove of garlic (depending on how strong you like it)
2tbsp of water
75ml extra virgin olive oil
grounded salt and pepper, according to taste
METHOD:
toast the pine nuts in a pan until there golden brown
Bit by bit add in the basil leaves, toasted pine nuts, cheese, garlic, oil, salt and pepper into a food processor.
blend for 3-4 minutes until nice and smooth.
Enjoy your pesto with fresh pasta!
