Homemade Basil Pesto

Okay so who doesn't love pesto?! This recipe is one of my favourites. It is easy and convenient, but above all - delicious. You can put pesto in pasta, bruschetta, garlic bread - it is amazing.


INGREDIENTS:


  • 25g toasted pine nuts

  • 50g fresh basil leaves with stalks removed

  • 50g hard Italian cheese, freshly grated

  • 1/2 or 1 clove of garlic (depending on how strong you like it)

  • 2tbsp of water

  • 75ml extra virgin olive oil

  • grounded salt and pepper, according to taste


METHOD:


  1. toast the pine nuts in a pan until there golden brown

  2. Bit by bit add in the basil leaves, toasted pine nuts, cheese, garlic, oil, salt and pepper into a food processor.

  3. blend for 3-4 minutes until nice and smooth.

  4. Enjoy your pesto with fresh pasta!
