Pasta Salad

The Humble Veggie

This is a really nice summer dish, perfect for a hot day when everything just feels too warm. I hate salad btw, so this is something that really helps me gets the yumminess and healthiness in!


INGREDIENTS:


20g toasted pine nuts

1 tsp dried mint

1/2 tsp mustard (according to taste too)

3/4 tsp chilli flakes

1/2 tsp oregano

1and 1/2 tsp chilli oil

2tbsp tbsp sour cream

1tsp black pepper

1/4 red onion

75g linguini

30g spinach

15g basil

25g red pepper

salt and pepper to taste

other things you can add: sweet corn, hard italian cheese, pecorino cheese, broccoli...


METHOD:


  1. Boil the pasta and toast the pine nuts.

  2. then chop the spinach, pepper, onion and other toppings finely

  3. then let the pasta cool or rinse pasta under cold water.

  4. mix in the sour cream, chilli oil, vegetables, herbs and salt and pepper and mix well.

  5. ENJOY!
