This pie. I can't express enough how wholesome this pie is, especially with some red wine gravy and creamy mash. It is truly incredible.
INGREDIENTS:
1 box of shitake mushrooms
1/2 cube of vegetable stock
1 and 1/2 cup of water
40g of butter
1/2 a box of chestnut mushrooms
2 large leeks, chopped finely
1 shallot
2 cloves of garlic
1 tbsp of thyme
1 and 1/2 tbsp of rosemary
1/4 cup of red wine
generous pinch of salt and pepper
a pinch of cayenne
100g of gruyere cheese
one puff pastry roll
METHOD:
Finely chop the leeks, garlic, shallots
Dice the mushrooms finely
Sauté the leeks and shallots and garlic in butter until cooked.
Then add the mushrooms and cayenne in
after the mushrooms have cooked nicely, add in the stock cube, water, salt, pepper, thyme, rosemary and red wine.
allow this to simmer for the next 10-15 minutes until the sauce thickens and develops flavour.
Then add in the gruyere and allow to melt.
Once this is done, pour the filling into your chosen pie dish.
Then cut your puff pastry shape and place over your filling.
Use egg wash or milk to brush the pastry sheet.
