Peanut Tofu & Stir Fry Rice


Peanut tofu & stir fried rice


This is one of my favourite dishes! Packed with protein & so much deliciousness! We used Manilife peanut butter. Their peanut butter is extremely creamy & nutty. A lot of peanut butter are quite solid and hard to spread, however this particular one was incredible easy to work with, especially with coating tofu.

Time: 45 mins

serves: 3-4 people


Ingredients:


1 block firm tofoo Co tofu


Stir fried rice:

2 cups brown rice

1 carrot

1/2 cabbage

2 cloves of garlic

2 spring onions

1/2 bag of bean sprouts


Peanut butter sauce:

3 tbsp of Manilife peanut butter (I used dark roasted and original)

1 tbsp of siracha sauce

2tbsp of water

1/2 salt

1tbsp sesame oil

1tsp soy sauce


Method:


  1. Cut the tofu block into small pieces, and make sure to remove any excess liquid

  2. Mix all the ingredients for the peanut butter sauce, and whisk well.

  3. Slowly, add in the tofu pieces to the sauce, and make sure it is coated well

  4. Leave aside for 30 minutes

  5. Chop your veggies however you want them

  6. Heat up some oil in a pan, and then add your garlic and then the veggies

  7. Stir regularly, and cook until partially fried! You can add flavouring if you prefer, but it’s not necessary. Sometimes I put in some soy sauce and hot chilli sauce

  8. After it has been 30 minutes, heat some oil in another pan, and start frying the tofu.

  9. Make sure you cook each individual side of the tofu piece.

  10. Once that has been cooked, everything is ready!
