This is my favourite go-to lunch when I don't have any time to cook. Wraps are a brilliant alternative to boring sandwiches and take only 5 minutes to prepare, the best part is you can add in whatever vegetables you like - the more inventive the better! The only key ingredient to give this dish it's taste is red peppers coated in paprika seasoning.
INGREDIENTS (Makes 1 wrap)
1 large tortilla wrap
Half a red pepper sliced julienne
A few slices of avocado
A few slices of aubergine
Two cherry tomatoes diced
Handful of black beans
A handful of spinach
1 Tbsp of hummus
Grated cheese
Chilli flakes (to taste)
METHOD:
I used a George Forman grill (very much recommend buying a cheap one - it can add a certain charred texture to food) to smoke the peppers and aubergine, after covering them in olive oil and smoked paprika however, if you don't have one, using an oven grill will work just fine! I grilled the vegetables for 10 minutes or until they were slightly charred
Spread the hummus over the tortilla wrap and add the rest of the ingredients in no particular order however, to wrap the tortilla it's important that you place the vegetables in the lower half of the wrap - I've attached an image below to demonstrate this further:
3. After wrapping the tortilla, place it back into the grill and clamp down (unless you are using an oven grill in which case leave it so the wrap cannot be undone if left unattended).Grill for 3 minutes, if you leave it for too long the tortilla will get very hard and crusty.
4. Cut the wrap in half from the centre and enjoy!
