Spicy Moringa Burgers

Healthy and protein filled vegetarian eating can be a challenge sometimes, which is why we decided to create spicy moringa burgers! These burgers are packed with black beans, carrots, peppers and not to mention the secret ingredient - moringa! Moringa is packed with antioxidants, lowers blood sugar and even inflammation, we were very generously gifted our pack by the people at Dhow Nature Foods (www.dhownaturefoods.com), be sure to check them out!


This recipe really tickles the taste-buds and is one I guarantee you will be dying to try again! I topped my burger with leafy salad, guacamole, a roasted red pepper slice, pesto, tomatoes and onions but the combinations are endless, so get creative!

INGREDIENTS: (Makes 3 Burgers)

  • 1 tin of black beans

  • Half a carrot grated

  • Half a green pepper chopped finely

  • 1 Tbsp Olive oil

  • 2 Tbsp corn starch

  • 3 Tbsp water

  • 1/2 Tsp chilli powder (ours was gifted by Dhow Nature Foods!)

  • 1/2 Tsp turmeric powder

  • 1/2 Tsp salt

  • 1/2 garlic powder

  • 2 Tbsp moringa powder

  • 1 Tsp paprika

  • 1 Tsp mixed herbs

  • 1 Tbsp lemon juice

  • 3 Tbsp plain flour

  • 1 cup of bread crumbs

METHOD:

  1. Preheat your oven at 180 degrees Celsius and oil a medium sized baking tray

  2. Place your olive oil into a pan and on a medium heat add the black beans. After a few minutes they should begin to soften, with a potato masher, mash your black beans until they from a paste like texture. Leave this mixture aside in a large bowl.

  3. Combine the carrot and chopped pepper with the black bean mixture

  4. In a separate bowl add the remaining ingredients (apart from the breadcrumbs and flour) and mix until all lumps are removed. Add this sauce-like mixture to your vegetables and combine with the plain flour.

  5. Mould your burger mixture into circles approximately just under an inch in thickness and coat entirely in bread crumbs. Place on the greased tray and leave in the oven for 15 minutes flipping mid way.
