Vegan Apple Chocolate and Oat Muffins

This recipe is an amazing one! I personally am a huge fan of fruity muffins for breakfast but have always struggled to find a recipe that's vegan, after some researching and adapting this is what I've come up with and ohhh trust me it's so worth trying out.






INGREDIENTS:

  • 1 1/2 cups self raising flour

  • 1 1/2 cups oats + 2 tablespoons for sprinkling on top

  • 3/4 cup brown sugar

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 2 tablespoons cocoa powder

  • 1/4 teaspoon salt

  • 1 and 1/4 cups plant based milk

  • 1/4 cup vegetable oil

  • 1 teaspoon vanilla

  • 1 teaspoon apple cider vinegar

  • 2 cups diced apples (roughly 1 cm cubes or smaller)

METHOD:

  1. Preheat your oven to 200 degrees Celsius and line a muffin tray with squares of parchment paper. When lining the muffin tray, use the bottom of a glass as weight to prevent the paper from falling out.

  2. Combine all the dry ingredients in a large mixing bowl

  3. Mix all the wet ingredients (excluding the apples) together with a whisk until completely combined

  4. Stir the apples in and spoon the mixture into your muffin tray (filling each muffin case to 3/4 full)

  5. Sprinkle the remaining oats on top and place into the oven at 200 degrees for 10 minutes then at 180 degrees for a further 8 minutes
