This recipe is an amazing one! I personally am a huge fan of fruity muffins for breakfast but have always struggled to find a recipe that's vegan, after some researching and adapting this is what I've come up with and ohhh trust me it's so worth trying out.
INGREDIENTS:
1 1/2 cups self raising flour
1 1/2 cups oats + 2 tablespoons for sprinkling on top
3/4 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
2 tablespoons cocoa powder
1/4 teaspoon salt
1 and 1/4 cups plant based milk
1/4 cup vegetable oil
1 teaspoon vanilla
1 teaspoon apple cider vinegar
2 cups diced apples (roughly 1 cm cubes or smaller)
METHOD:
Preheat your oven to 200 degrees Celsius and line a muffin tray with squares of parchment paper. When lining the muffin tray, use the bottom of a glass as weight to prevent the paper from falling out.
Combine all the dry ingredients in a large mixing bowl
Mix all the wet ingredients (excluding the apples) together with a whisk until completely combined
Stir the apples in and spoon the mixture into your muffin tray (filling each muffin case to 3/4 full)
Sprinkle the remaining oats on top and place into the oven at 200 degrees for 10 minutes then at 180 degrees for a further 8 minutes
