This isn't your traditional doughnut recipe, firstly they're vegan and secondly the combination of flavours are strange but trust me it works!
INGREDIENTS (Makes 5):
25g vegan margarine
60ml of soya milk
125g plain flour
2 tbsp vegetable oil
3 Tbsp caster sugar
1 tsp baking powder
25g desiccated coconut
Handful of frozen mixed summer berries
1 cup of white chocolate
METHOD:
Gently heat the margarine, milk oil in a saucepan until combined then set aside
In a bowl add the sugar baking powder, coconut and flour and mix together
Pour in mixture from the saucepan into the bowl and mix together until a dough forms (it should be quite sticky)
Separate the dough into 5 evenly size portions and make each portion into a doughnut shape, poking a hole in the centre
Deep fry each of your doughnuts at a low heat to avoid it burning and leave to cool
Blend the frozen berries and the place the mixture into a saucepan, cover and leave for a few mixtures until a liquid forms at the bottom. To retain the liquid, strain with a sieve the contents of the saucepan over a bowl and keep aside
Melt the chocolate and pour over the doughnuts then take a spoon and drizzle the berry sauce over the doughnuts, to get the marbled effect use a toothpick to create patterns.
